Mountain Benny – Eggs-actly!

Sometimes it takes a moment of ingenuity and wild creativity to improve upon a classic piece of work. If you’re anything like me you love a traditional Eggs Benedict – muffin at its base, layered with some ham, topped with soft poached eggs, and dollops of glossy hollandaise sauce. A work of art when its done well. Hard to beat. Yet, on a little getaway to Black Mountain in North Carolina, we were treated to the Mountain Benny. This is an Eggs Benedict with a waffle as its fabulous foundation, a crispy piece of Southern fried chicken, a delicately oozing poached egg (if it ain’t broke, don’t fix it) and smothered in sausage gravy. With some home fries on the side of course. It was an explosion of flavours and a creative jackpot. Should you find yourself in the Appalachian Mountains and near Open Oven, then dont hesitate. Go there and eat this!
